I've just got one pretending to be BT. WTF would anyone want BT
account login details - surely all you'd be able to do is see bills,
change payment method, sign up for new services etc.

...Get a list of every phone number you call;

Which would be useful for?

print off a bill, which could be used as a contribution to stealing
your I/D...

Possibly, but I thought bills printed off the web weren't usually
acceptable as proof of ID, and as you say it wouldn't be enough on its
own.

I have always shredded or burned any such documents before discarding.

About 10 years ago somebody managed to convince two large stores in
Manchester that they were me. I did remember receiving a household
bill some time before this which was badly sealed, but neither the
under-writing bank nor the stores would tell me what I/D evidence had
been provided by the fraudster.

An elementary check would have shown that he used the wrong initial for
my first name.
